Adventures in Cooking: Lebanese-Style Red Lentil Soup

I made this soup for PO and I on Sunday and oh my goodness it was yummy!


Ingredients:
6 cups of vegetable broth
1 lb of red lentils (I used split lentils)
3 tablespoons olive oil
1 tablespoon minced garlic
1 large yellow onion, diced
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper (or more!)
1/2 cup chopped cilantro
1/2 cup fresh lemon juice

Directions: 
Bring vegetable broth and lentils to a boil in a large pot, then reduce heat to medium/low, cover and simmer for 20 minutes (12 minutes if using split lentils.)

Meanwhile, heat olive oil in a skillet and saute the garlic and onions for a couple minutes.

Stir the onions/garlic into the pot of lentils and season with cumin and cayenne. Continue simmering for 10 more minutes (or about 5 more minutes if using split lentils.)

Pour the soup in to a blender and puree until smooth. Pour the soup in to a bowl and garnish with cilantro and lemon juice.

Raw Food Detox Diet

Paul and I embarked on a journey one month ago. . . the goal was to get healthy, eat right, exercise and shed a few pounds. I purchased this book:

And am proud to say that I think it has just about dam near changed my life! Paul and I have cut out meat, dairy and processed food from our diets and are eating mostly raw foods. We aren't quite the extreme rawists yet, but we have made a ton of changes to date and are definitely reaping the benefits. We both have lots several pounds and have more energy and stamina than ever before! It's more of a lifestyle change than it is a 'diet' and I am definitely glad we have made the changes that we have!

We are eating all sorts of new, exciting and tasty foods and I plan to share some recipes on the blog soon!

San Francisco

Saturday, February 12th PO and I took a drive to San Francisco for the day. We hung out in China town and Haight-Ashbury. We had a wonderful day just taking in the sites and being touristy. It was a great pre-Valentines day adventure!
